Whole Foods to Sell Deerfields’ Gluten-Free Cookies

Schaumburg, Ill. (July 24, 2008)– Deerfields Bakery, a family-owned business located in Chicago’s north and northwest suburbs, announced that three Whole Foods in the Chicago area are selling three varieties of the bakery’s gluten-free cookies.

Three Whole Foods stores, Lincoln Park (3241 N. Lincoln Ave.; 773-755-1500), South Loop (1101 S. Canal St.; 312-435-4600) and Wheaton (145 Rice Lake Sq.; 630-588-1500), will sell three varieties of the bakery’s gluten-free cookies: Triple Chips, Lemon Buttons and Day Dreams.

Triple Chips are chocolate chip cookies with milk, dark and white chocolate chips. They have an added burst of protein with the addition of quinoa, an ancient grain considered to be a complete protein due to the presence of all 8 essential amino acids. Lemon Buttons, infused with real lemon, are topped with a lemon icing. Day Dreams are brownie-like cookies with white chocolate chips.

“With the alarming rate of allergies and intolerances showing up in our population, we wanted to create gluten-free products that use only natural ingredients,” Deerfields Bakery co-owner Kurt Schmitt explained. “It’s a perfect match-up with the Whole Foods’ philosophy.”

Whole Foods features foods that are free from artificial preservatives, colors, flavors, sweeteners and hydrogenated fats, and are committed to foods that are fresh, wholesome and safe to eat.

Green Measures
Deerfields Bakery, like Whole Foods, is also pursuing green measures. Its online gluten-free store (www.DeerfieldsGlutenFree.com) adopted a carbon offset policy by joining the CarbonFree Small Business Program at Carbonfund.org. The Web site offsets a minimum of 70 tons in this program.

At Deerfields Bakery, general manager and co-owner, Tim Schmitt, has adopted green measures for all three Deerfields Bakery locations, stating, “Deerfields Bakery recognizes an immediate need for successful businesses, small and large, to lead the way in reducing our environmental impact.”

“While it is difficult to change completely overnight, we have set a series of milestones to achieve over the next few years,” Schmitt added. “The initiatives span from the reduction of packaging waste and unfriendly materials, to general utility reduction, and recycling programs from production to the retail storefront.”
